Chili and Ginger Szechuan Green Beans--Recipe of the month!

Ingredients:
2 lbs of organic green beans (snipped and washed)
2 shallots
1 thumb's length worth of fresh ginger
1 red chili pepper or 1 tablespoon of red chili paste
2 tablespoons of olive oil
Directions
Slip and clean beans
Dice shallots and ginger
Sautee shallots, giner, and red chili preference in 1 tablespoon of olive oil
Remove from pan and set aside (do not wash pan)
Sautee green beans until your desired cooked preference. I enjoyed them al dente
When beans are cooked to your desire add reserved shallots and ginger
Season with garlic, salt and pepper
