Easy Peasy Paleo Caesar Dressing


One concern I often hear from people when making the jump to a Paleo lifestyle is they fear they will have to give up all their favorite foods. Learning to live a healthy lifestyle isn't about deprivation or giving up what you love. It's about learning how to cook and prepare meals with clean, locally sourced, fresh, and tasty ingredients. Here's one of my all time favorites turned into a Paleo dream!

In a small mason jar add the following:

-1/3 cup of olive oil

-Juice of 1.5 fresh squeezed lemons

-Fresh garlic pressed

-One local, free range egg

-2 tablespoons of dijon mustard (check to be sure there's no sugar in the product you are using)

-Anchovy paste to taste

-Fresh ground pepper to taste

-1/4 tsp of cayenne pepper (optional)

Shake vigorously until blended and store in the fridge for use up to three days
